Gothel should have known, after the first time the king and क्वीन released lanterns on the birthday, that Rapunzel might have found it slightly suspicious (if Gothel had told her the exact birth date, which she really shouldn't have).

So, realistically speaking, Rapunzel shouldn't have known about birthdays, especially since her own "mother" is "ageless." Obviously, Gothel wouldn't want Rapunzel to know her age, so why tell Rapunzel when her birthday is? Why tell Rapunzel what a birthday even is? Oh, God. My brain hurts, haha.
