Why did the fairies told Aurora she was a princess the day of her birthday and not a day after, when she would be out of danger?

I sound like a broken record: Fairy tale! It's not about telling a story with well rounded characters, is about symbolism and emotions.
And I think it makes sense that the fairies would become overconfidend when they nearly won. I think they brought Aurora to the castle early to avoid her seeing the stranger again.

I mentioned how I felt about this film and the issues with the film many times. Anyone who knows me, knows how I view this film

How did Maleficent know that Aurora would only sleep and not die? She didn't seem to when she was all frantic right before Aurora's birthday. However, when she tells Philip about Aurora, she knows Aurora is just sleeping and seems to know about all the details of the spell, as well.

^ that is so true. When she cast the curse, she said Aurora would DIE, and she left before Merrywether cast her gift.

There were hundreds of people who witnessed what happened, and Maleficent is the all powerful Empress of Evil. The fairies even mention how all-knowing she is when they talk about possible plans to rescue Aurora (and they do it in a small cabinett because they are afraid to get overheard).

I just thought of another one. They were living like mortals for 16 years- how did they get along like that without learning to cook or sew?

Just because Fauna couldn't bake doesn't mean that they all are unable in the kitchen. Merryweather knew the terms in the cook book, so she most likely did the cooking. And they still wore their magiced clothes, the only ones they need were for Aurora...perhaps they bought them.
